Step 2. Turn the dough onto a lightly floured surface and knead for about 10 minutes or until the dough is smooth and elastic.
Step 3. Brush a bowl with oil and return the dough to the bowl, turning to coat the dough completely with oil. Cover with a damp tea towel and set aside in a warm place for 30 minutes or until dough doubled in size.
Step 4. Punch down the dough with your fist and knead for 30 seconds or until the dough is back to its original size. Cut the dough in half and cover 1 portion with a damp tea towel. Roll out the other portion to a 30cm circle.
Step 5. Preheat your pizza oven to your desired temp (usually between 400ºC and 450ºC. Dust a pizza board/paddle/tray with a little semolina and place your dough. Ease the dough so it comes a little up at the sides, this forms a thicker edge during baking.
Step 6. Use your fingers to press the base, avoiding the edge, to make indents. This stops it from rising in the centre. Add your desired toppings and bake. Turn your pizza in the oven several times so it cooks all around.
Step 7. Repeat with the remaining dough.
