Halloumi & Vegetable Skewers
INGREDIENTS (serves 4)
1 block halloumi cheese cut into 1-inch cubes
1 cup cherry tomatoes
2 bell peppers (any colour), cut into 1-inch pieces
1 red onion chopped in chunks
2 tbsp olive oil
1 tsp dried oregano or za’atar
Salt & black pepper to taste
Optional: lemon wedges & fresh parsley for garnish
Metal or soaked wooden skewers
INSTRUCTIONS
Fire up your wood-fired oven and allow it to settle to a medium-high heat (around 260°C).
Push embers to the side and let the floor cool slightly—perfect for grilling.
In a bowl, toss halloumi, bell peppers, onion and cherry tomatoes with:
Olive oil
Oregano or za’atar
Salt & pepper
Thread onto skewers in alternating order: pepper – tomato – halloumi – onion repeat.
Place the skewers in a cast iron grill pan
Cook for 6–8 minutes, turning once or twice:
Halloumi should be golden and slightly crisp on the outside
Veggies should be tender with charred edges
Serve:
Transfer to a serving plate.
Squeeze fresh lemon juice over the top.
Garnish with chopped parsley or mint.
Serve with pita, hummus, or a simple yogurt-tahini sauce.
