Halloumi & Vegetable Skewers - 1

INGREDIENTS (serves 4)

  • 1 block halloumi cheese cut into 1-inch cubes
  • 1 cup cherry tomatoes
  • 2 bell peppers (any colour), cut into 1-inch pieces
  • 1 red onion chopped in chunks
  • 2 tbsp olive oil
  • 1 tsp dried oregano or za’atar
  • Salt & black pepper to taste
  • Optional: lemon wedges & fresh parsley for garnish
  • Metal or soaked wooden skewers

INSTRUCTIONS

  • Fire up your wood-fired oven and allow it to settle to a medium-high heat (around 260°C).
  • Push embers to the side and let the floor cool slightly—perfect for grilling.
  • In a bowl, toss halloumi, bell peppers, onion and cherry tomatoes with:
    • Olive oil
    • Oregano or za’atar
    • Salt & pepper
  • Thread onto skewers in alternating order: pepper – tomato – halloumi – onion repeat.
  • Place the skewers in a cast iron grill pan
  • Cook for 6–8 minutes, turning once or twice:
    • Halloumi should be golden and slightly crisp on the outside
    • Veggies should be tender with charred edges

Serve:

  • Transfer to a serving plate.
  • Squeeze fresh lemon juice over the top.
  • Garnish with chopped parsley or mint.
  • Serve with pita, hummus, or a simple yogurt-tahini sauce.
