Fruit Crumble

Ingredients 

  • Choose one of the following (or mix):
  • Apples: 4 apples, peeled and sliced
  • Peaches: 4 peaches, sliced
  • Berries: 3 cups mixed berries (fresh or frozen)
  • Plus:
  • 2 tbsp sugar (more for tart fruits)
  • 1–2 tbsp lemon juice
  • 1 tsp cinnamon (optional)
  • 1 tbsp cornflour (helps thicken juices)
  • For the crumble topping
  • 1 cup plain flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • 100g cold butter, diced
  • Pinch of salt
  • Optional: ½ cup chopped almonds, pecans or walnuts

Method

  • Bring your pizza oven to 200–230°C with an even bed of coals.
  • You want a gentle flame, not roaring fire.
  • In an ovenproof dish (cast iron, enamel, or terracotta), combine: chosen fruit, Sugar, Lemon juice, Cinnamon (if using), Cornflour
  • Mix well and spread evenly.
  • In a bowl, mix flour, oats, brown sugar, and salt.
  • Rub in the cold butter with your fingers until it forms coarse crumbs.
  • Stir in nuts if using.
  • Sprinkle generously over the fruit, covering it completely.
  • Place the dish into the pizza oven, away from direct flame.
  • Bake 12–18 minutes, rotating halfway.
  • The topping should turn golden and crisp, and the fruit should bubble around the edges.
  • Let the crumble cool for 5 minutes—the fruit will be very hot.
  • Serve warm with chilled pannacotta on the side for a hot-and-cold contrast.
