Scotch Finger biscuits (or any other pain biscuit)
Method
1. Prep your oven Let your pizza oven cool down after cooking or heat up to a moderate heat (around 180–220°C). You want ambient heat, not roaring flames.
2. Build your s’mores
Using an oven proof tray place 2 squares of dark chocolate on one Scotch Finger biscuit
Add a marshmallow on top
3. Into the oven
Put them in the oven for 1–2 minutes
Watch closely—the marshmallow will puff and go golden quickly
Use a pizza peel or gloves to turn the tray so ingredients don’t burn
4. Finish
Remove from the oven
Top with another Scotch Finger biscuit
Gently press together so the melted marshmallow and chocolate combine

If your oven is still too hot, cook near the entrance for gentler heat
