Sweet potato dip - 1

INGREDIENTS

  • 1 large sweet potato peeled
  • 1 tbsp cream cheese
  • Half cup of roasted pine nuts
  • Oil and salt for tasting
  • Parsley or coriander to sprinkle

INSTRUCTIONS

  • Cut potato in small chunks, drizzle with oil and salt and roast in oven for 15-20 minutes on 260 degrees
  • Brown the potato but don’t let it burn
  • Once cooked, mash in a bowl and add cream cheese
  • Add the roasted pine nuts and drizzle with more olive oil
  • Sprinkle with parsley or coriander depending on the theme of your meal

NOTES

  • Cooking the potato in a wood fired oven really gives the potato a smokey flavour
  • Eat dip with a side of bread, crackers or other roasted vegetables like asparagus which is great for dipping
